WILD RABBIT RECIPE

Ingredientes

6 PEOPLE

  • 2 rabbits
  • 2 onions
  • 1 head of garlic
  • 1 glass of EVOO Picual (200ml / 7 oz)
  • 2 glasses of white wine (400ml / 14 oz)
  • 1 gluten-free beer (250ml / 8 oz)
  • 1 glass of water (200ml / 7 oz)
  • 2 laurel leaves
  • Salt

PREPARATION


Chop the onion and garlic and slice the two rabbits. Add 1 glass of EVOO Picual to a pressure cooker and heat the pot over high heat. Add the chopped onions and garlic in the pot as well as 2 laurel leaves. Fry the onion and the garlic for 2-3 minutes. Add the sliced rabbits in the pot and mix everything up. When the rabbit is sealed (approx. 5 minutes) add 2 glasses of white wine, 1 beer and 1 glass of water. Cover the pot for 20 minutes and set the pressure cooker at two. After 20 minutes remove the air of the pot and uncover it and then let the rabbit cook for 30 minutes. Add water if necessary.

*If the rabbit was bought and not from the field, the pressure cooker is not necessary. It would be enough to cook the rabbit for 30/40 minutes.

Use of the Picual: We choose the Picual because it is ideal for making meat stews. It is an EVOO with a balanced bitterness and green leaves, tomato and citrus aromas. Of our EVOO, it is the most intense and makes it ideal for powerful dishes.
