Stuffed Aubergines



  • 2 medium aubergines
  • 3 tins of tuna
  • 300 g / 10 ½ oz of natural fried tomato sauce
  • 150 g / 5 ½ oz of grated cheese
  • 1 onion
  • 2 green peppers
  • ½ red pepper
  • 2 cloves of garlic
  • 2 tablespoons of EVOO Picual
  • Salt


Chop pepper, onion and garlic. Split the aubergines in two. Place in a bowl with water and salt for 10 minutes. Place aubergines in the oven at 180º up and down with a fan for 40 minutes. Remove the aubergines and with a spoon remove the meat and cut it into pieces.

Add the pepper to the pan with EVOO heated on medium and leave for 4-5 minutes. Add onion and garlic and leave for 2-3 minutes. Add the aubergine meat and leave for 10 minutes. Add half of the tomato sauce and the tuna and leave for 10 minutes.

Fill the aubergines. Place the stuffed aubergines on a tray with a tomato sauce base. Add the cheese and bake in the oven at 180º up and down for 10 minutes.

Use the Picual: We choose the Picual because of its great stability which makes it an EVOO ideal for frying. Of our three EVOOs, it is the one with the highest level of polyphenols. The stability of an EVOO depends on the polyphenols.
