SALMOREJO RECIPE

Ingredientes

6 PEOPLE

  • 16 plum tomatoes
  • 2 coreless apples (Golden ones turn out very well)
  • ¼ onion
  • ¼ of red pepper
  • 3 cloves of garlic
  • 200ml / 7 oz of EVOO Arbequina
  • 2 tablespoons of vinegar
  • Salt

PREPARATION

Peel the tomatoes, red pepper and apples and remove the core. Cut into pieces the tomatoes, the pepper, the apples, the onion, the garlic and put everything in a container. Add the EVOO, vinegar and salt. Blend everything with a mixer and place the salmorejo in the fridge. Serve cold.

PRESENTATION

It is served with chopped egg, pieces of ham and a squirt of EVOO Arbequina.

Use of Arbequino: We choose Arbequino, a soft and sweet EVOO, ideal for gazpachos and salmorejo.
