Chop the onion, garlic and leek. With the shells of the prawns we make a fumé. To do so, put the shells, a pinch of salt and a glass of water in a pot. Then heat on medium for 5 minutes. In another pot pour 2 tablespoons of EVOO and heat on medium. Fry the onion, garlic and leek for 2-3 minutes. Beat the sauce and the fumé with one arm. Pour the beaten sauté and fumé into the pot on medium heat. Add the prawns and leave for 2-3 minutes. Add clams and wine. Cover the pot for one minute. Add the hake fillets and boil for 7-8 minutes with the pot covered.
