Cut the steaks into strips and julienne the onion, pepper and carrot. Pour 100ml of EVOO into a pot and cook over medium heat. Fry the onions until tender (approx. 10 minutes). A little before they are ready, add the julienne of peppers and carrots and leave it for 10 minutes. Add salt.
Pour 2 spoons of EVOO into a pan and cook over medium heat. Seal the beef strips (approx. 1 minute). Sprinkle the beef strips with salt and pepper. Add the beef strips to the pot with the vegetables and add Modena vinegar and honey, then leave 5 minutes cooking over medium heat.
