Baked salmon



  • 3 slices of salmon
  • 4 medium potatoes
  • 1 ½ onion
  • 1 tomato
  • ½ glass of white wine
  • 2 glasses of EVOO Picual
  • 2 tablespoons of EVOO Coupage
  • Salt and pepper


Cut into slices the potatoes, onion and tomato. In a pan, fry the potatoes with salt and two glasses of EVOO Picual over a high heat for 4 minutes. Remove the potatoes and place them in the dish. Add the onion to the dish, on top of the potato layer. Add a layer of tomato to the dish. Season the salmon and add to the dish. Pour a dash of EVOO Coupage on top. Pour ½ a glass of white wine. Preheat the oven at 200 degrees for 10-15 minutes. Bake at 180 degrees for 25 minutes.

Use the Picual: We choose the Picual because of its great stability which makes it an EVOO ideal for frying. Of our three EVOOs, it is the one with the highest level of polyphenols. The stability of an EVOO depends on the polyphenols.
