Smooth and velvety, with the cheese melting on top just before it is brought to the table, ready in the time it takes to set the plates.
Picual brings its notes of green leaf and citrus, giving character to a cream soup that would otherwise be very neutral, without the zucchini losing its starring role.

Notes
- We chose Picual for its great stability and because, of our three EVOOs, it has the highest level of polyphenols. In addition, its aromas of green leaf, tomato plant and citrus add nuance to this soup.
- A drizzle of raw EVOO when serving really enhances the final flavor.
- It can be frozen without the cheese, adding it only when reheating.
- You can swap the zucchini for pumpkin in the same recipe to vary the flavor.
