The Polyphenol Project is Cortijo de Suerte Alta’s most exclusive and health-oriented line. A 100% ultra-early harvest Picual EVOO, designed to reach polyphenol concentrations exceeding 1,500 mg/kg, well above the 250 mg/kg minimum required by EU Regulation 432/2012 to make the health claim “olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.”

To achieve these figures, we work in collaboration with researchers from Andalusian universities and apply a strict protocol: harvesting at very early veraison, refrigerated transport, milling in less than two hours, and extraction at a very low temperature (<22°C). Each batch is analyzed by HPLC and labeled with its exact concentration certified by an accredited laboratory.

Sensorially intense, with pronounced bitterness and pungency—phenolic compounds are responsible for both attributes, making these descriptors quality markers. Intended for raw consumption: one tablespoon a day provides the polyphenols necessary to activate the EU health claim.

The process

From the grove to the bottle

Four generations caring for the same olive grove since 1924. No shortcuts, no chemicals, and with the respect required by a tree that has been standing longer than any of us.

1. Selection for maximum phenolic concentration. Picual exclusively from the young olive grove (10-40 years) with high natural polyphenol concentrations. CAAE organic farming with practices that stimulate the accumulation of antioxidants in the fruit.

2. Ultra-early harvest. Very early harvesting—only for 1 day a year, when the olive is still green with the first violet touches—to capture the peak of hydroxytyrosol, oleuropein, and other polyphenols.

3. Ultra-cold extraction. Refrigerated transport, milling in less than 2 hours, and extraction below 22°C (even colder than the early harvest standard). Each parameter is adjusted to maximize the preservation of thermolabile compounds. Discover the mill →

4. HPLC analysis and protective packaging. Each batch is analyzed by high-performance liquid chromatography in an accredited laboratory and labeled with its exact polyphenol content. Packaged in a protective violet glass bottle to maximize antioxidant preservation.

How to use a high polyphenol EVOO

The Polyphenol Project is intended for a very specific functional and sensory consumption: one tablespoon a day, raw. Its phenolic intensity is exceptional—it is not an everyday EVOO but a premium nutritional tool.

Tablespoon on an empty stomach

One tablespoon (15 ml) on an empty stomach activates the EU claim for protection against oxidative damage to blood lipids.

The Polyphenol Project was born for those who choose an EVOO by prioritizing its natural richness in polyphenols over the organoleptic profile.

It is an innovative Suerte Alta project, in line with our commitment to deepening research, investment, and technological development in the field, adapting to the 21st century and new trends.

We select olive trees from the highest areas and those with the greatest water stress on the estate, where the polyphenol concentration tends to be higher.

It is a very limited production: the harvest—in September—lasts no more than one day and the entire process is adapted to a single objective: maximum polyphenol concentration.

What you should know about Extra Virgin Olive Oil polyphenols

We answer the most common questions about our polyphenol project, its name, formats, and use.

The olive oils with the highest concentration of polyphenols are early harvest monovarietal Picual EVOOs, such as Suerte Alta’s Polyphenol Project.

In organic EVOO (Extra Virgin Olive Oil), such as Suerte Alta’s, polyphenols are natural bioactive compounds that act as the olive tree’s defense system and determine much of the oil’s quality. They are responsible for the intensity, bitterness, and pungency characteristic of good EVOO, as well as its antioxidant capacity.

In fact, olive oil polyphenols have a health claim authorized by the EU (Regulation 432/2012): they contribute to the protection of blood lipids from oxidative damage in oils with at least 5 mg of hydroxytyrosol and derivatives per 20 g.

Furthermore, by being cultivated without pesticides or synthetic chemical fertilizers, the organic olive tree activates its own defense mechanisms more strongly, which can favor a higher concentration of these antioxidants.

A high polyphenol olive oil is achieved by taking care of every step to preserve these antioxidants, which are fragile and degrade with heat, time, and oxidation. At Suerte Alta, for our Polyphenol Project, we follow four keys:

  1. We hand-select olive trees from the highest areas and those with the greatest water stress, where the olives concentrate more polyphenols.
  2. We harvest in the cold and protect the olives from the sun at all times.
  3. We mill in less than two hours from harvest to avoid oxidation.
  4. We malaxate the paste at a very low temperature and for a short time, sacrificing yield to maximize polyphenol preservation.

A high polyphenol olive oil is preferably taken raw and daily, in small quantities: a tablespoon on an empty stomach (alone or with a few drops of lemon), in juices and smoothies, or over dishes and bowls.

However, it is a very intense EVOO, with marked bitterness and pungency—a sign of its natural richness in polyphenols—so a small amount is enough. At Suerte Alta, you will find it in our Polyphenol Project.

The scientific evidence on polyphenols in Extra Virgin Olive Oil is immense. Over the last decades, human clinical trials and large epidemiological studies have been conducted. Some relevant studies:

  1. Oleocanthal Discovery and Study – United States (1999): Dr. Gary Beauchamp first observed the similarity to ibuprofen – published in 2005.
  2. PREDIMED Study – Spain (2003 – 2011): Multicenter study focused on cardiovascular outcomes.
  3. EFSA Opinion – European Union (2011): basis for the only officially authorized health claim for extra virgin olive oil polyphenols.
  4. Cohort meta-analysis on longevity – United States and Europe (2017): studies associating polyphenols with greater longevity.

The Polyphenol Project is the only organic EVOO from Suerte Alta developed with the explicit intention of maximizing its total polyphenol levels, taking care of every phase: cultivation in the field, the production process, and its correct preservation. Hence its name.
