Cortijo de Suerte Alta’s Picual en Envero is an organic monovarietal Extra Virgin Olive Oil protected under the Baena Designation of Origin (D.O.P.), made 100% from Picual olives, native to the south of Córdoba and considered the queen of Mediterranean oils for its character, intensity and exceptional polyphenol content.
Harvesting takes place at the exact moment of veraison: the narrow two-week window in which the olive turns from intense green to violet and concentrates its phenolic compounds at their peak. The olives reach the mill in under four hours and are cold-extracted below 27°C. The result: an EVOO with over 1200 mg/kg of polyphenols and an acidity below 0.12%.

The process
Four generations caring for the same olive grove since 1924. No shortcuts, no chemicals, and with the respect demanded by a tree that has stood longer than any of us.
1. Young Picual olive grove. 50 hectares dedicated to intensive cultivation of the Picual variety, with trees between 10 and 40 years old. CAAE organic certification since 1996. Drip irrigation and native ground cover between rows.
2. Harvest at veraison. When the olive enters the transition from green to violet —known as “veraison”— is when it concentrates the maximum amount of polyphenols. We produce fewer kilos per hectare, but every drop is packed with natural antioxidants.
3. Bioclimatic mill. From branch to mill in under 4 hours. Immediate milling, short malaxation and cold extraction below 27°C. Learn about our mill →
4. Natural decanting and bottling. Resting in stainless steel tanks under an inert atmosphere and bottled in opaque green glass for total protection from light.

Picual en Envero is a versatile EVOO that shines both raw and in gentle cooking. Its medium intensity and persistent finish of ripe almond make it ideal for bold dishes and for lovers of a well-balanced Picual character.

The origin
Picual is the most widespread variety in Andalusia and the most recognisable on the palate: body, intensity, and among the varieties with the highest natural polyphenol concentration in the Mediterranean olive grove.
Picual en Envero from Cortijo de Suerte Alta is produced with trees aged between 40 and 100 years, grown in both traditional and intensive groves. The trees have precision drip irrigation. These plots are located on the Albendín estate, in Baena.
The key lies in the exact moment of harvest: veraison, that narrow two-week window in which the olive turns from green to violet and concentrates its organoleptic and phenolic compounds at their peak expression.

Harvest philosophy
Bringing the harvest forward to veraison means producing fewer kilos of oil per hectare —between 25% and 30% less than the traditional harvest—, but each kilo concentrates a far superior sensory profile and almost triple the polyphenols. It has been our family’s commitment for three decades: quality over volume.

Córdoba region of Andalusia
Picual is the native variety and the most widely grown in Andalusian olive groves. It thrives and adapts better than any other to the brown calcareous soils and continental climate of Baena.

Veraison is the exact point of ripeness at which the olive begins to turn from green to violet. It is the window in which the fruit concentrates the maximum amount of polyphenols. Harvesting at this point takes experience: it lasts only 10 to 15 days a year, and every hour counts.
Picual is, genetically, the variety with the highest natural polyphenol content in the world. Its olives produce hydroxytyrosol, oleocanthal and oleuropein at especially high concentrations. Harvested at veraison, that concentration multiplies.

Thanks to its high natural concentration of antioxidants, Picual en Envero is one of the most stable EVOOs there are. Stored correctly (cool, dark and well sealed), it keeps its qualities for 18-24 months. Once opened, we recommend consuming it within 3-4 months to enjoy its fruitiness intact.
