Homemade Tomato Sauce

Our Homemade Tomato Sauce is the base we use in several of our house recipes. Simple and quick to prepare, with just the right touch of sugar and oregano, it is far superior to any shop-bought jar and freezes perfectly so you always have some to hand.

Ingredients

  • 8 Tomatoes
  • 1 Onion
  • 2 tablespoons EVOO
  • A pinch of salt
  • 1 tablespoons Sugar
  • 1 tablespoon Oregano

Instructions

  • Prepare the vegetables.
Cut the onion and tomato into pieces.
  • Sauté the onion.
Pour the EVOO into a pot and sauté the onion for a couple of minutes.
  • Cook the sauce.
Add the tomato, salt, sugar and oregano. Cook for 15 to 20 minutes over medium heat.
  • If the tomato is acidic, add a little more sugar to balance the flavour.
  • Blend.
Blend with a hand blender until you reach the desired texture.

Notes

  • This is the homemade tomato sauce we use as a base in several of our house recipes (such as Lentils with Black Pudding, Noodle Casserole or Cod with Pisto).
  • It freezes perfectly in portions; it is well worth always keeping some ready in reserve.
  • If you prefer a more rustic texture, do not blend it completely and leave some chunks.
