Ingredients

  • 1 Chicken breast fillets
  • 5 slices Serrano ham
  • 5 White asparagus
  • 1 Onion
  • 3 cloves Garlic
  • 1 glass White wine
  • 2 tablespoons Marqués de Prado EVOO
  • Salt and pepper To taste

Instructions

  • Prepare the filling.
Chop the onion and garlic. Cut the asparagus in half and the ham slices in half as well.
  • Assemble the rolls.
Season the chicken fillets with salt and pepper. Place a slice of ham and half an asparagus spear on each fillet, roll them up and secure them with a toothpick.
  • Secure the rolls well with a toothpick and remember to remove it before serving.
  • Sauté the base.
Sauté the onion and garlic over medium heat for 3-4 minutes.
  • Brown the rolls.
Add the rolls and brown them for about 7-8 minutes.
  • Finish cooking.
Pour in the white wine and cook for a further 10 minutes.

Notes

  • We chose Marqués de Prado because it is a mild, sweet EVOO, ideal for balancing the saltiness of the ham.
  • They can be grilled instead of stewed for a lighter version.
  • It pairs well with a side of baker-style potatoes or mashed potatoes.
  • They can be assembled and left in the fridge overnight, ready to cook when needed.
